Every year during the harvest (September-October) the grapes are hand-picked from selected plots, carried in food-safe plastic crates and carefully sorted before going into the winery. One part goes to the old stone “lagares”, where the grapes are foot-trodden in the old traditional way. Another part goes to the two wineryes for temperature-controlled fermentation in stainless steel tanks.

Once the harvest is finished each type of wine is then stored in a different warehouse.

- the Port warehouse (with temperature control) where it ages in old Portuguese oak casks
- the Red Wine warehouse (with temperature control) where it ages in stainless steel vats
- the Red Wine Cellar (with temperature and humidity control) where it ages in French and American oak casks
